Peppered Goat Flesh, also called Asun in Nigeria, is a finger-licking, lip-smacking combination of roasted goat meat sauteed in hot chili and red bell peppers that is so good, you’ll be tempted to devour it all at once!
Native to Western Nigeria’s Yoruba-speaking Ondo people, Homemade peppered goat meat, Asun recipe, can be prepared in the same way as our peppered snails or peppered gizzards (Gizdodo). It is a meal that your family will love without having to wait for a party.
As you make this asun recipe, you’ll find yourself preparing it again and again, and this will require everything you have to avoid eating it. It can be served as a side dish with cauliflower rice or other low-carb entrées, or it can be eaten on its own.
What exactly is Asun?
In Nigeria, Asun is a well-known Yoruba delicacy that consists of the most delightful grilled or smoked chunks of goat flesh garnished with onions; scotch bonnet peppers (Atarodo), green or red bell peppers, and salt. The Yoruba owambe party is incomplete without Asun.

Surprisingly, goat meat is much healthier than beef, which many people are unaware of. It contains more protein and iron than beef, pigs, lamb, and chicken while being lower in calories.

What to Do to Get Rid of the Smell of Goat Meat
If you’ve ever been near a farm with goats, you’ll know that the billy (male) goats stink to high heaven! Unfortunately, this also applies to the meat, so if you eat a male goat, it will stink.
If you buy your goat from a butcher, request a female goat because they do not stink as much.
If you already have the goat flesh and can’t tolerate the stench, there is a way to salvage the situation.
Popularly known as “Asun” in Nigeria, is a knuckle-and-mouth mixture of smoked goat meat sauteed in fiery chili pepper and red bell peppers that is so delicious, you’ll want to taste it all at once!
How to Make a Delicious Asun Recipe
This asun recipe can be made with any type of goat meat.
Ingredients for Asun
- Goat flesh, 1.2kg (2.6 pounds) (cut with the skin)
- 2 habanero chilies (or to your taste)
- 3 large stock cubes
- 1 teaspoon thyme, fresh
- Salt (to taste)
- 1 tablespoon vegetable oil
- A pinch of black pepper (optional)
As a garnish
- 1 onion (medium)
- 1 green bell pepper, tiny.
- 1 small red bell pepper
How to Cook Peppered Goat Meat
- 1. Cut the goat meat into bite-sized pieces.Make sure the portions are chopped using the goat skin. It won’t be authentic until the skin is present.
- 2-Wash the goat meat chunks and place them in a basin.
- 3-Crush the thyme and black pepper, then add the stock cubes. Feel free to add any other spices or seasonings that you use to marinade the meat.
- 4-Gently massage the spices and goat flesh together with your hands.
- 5-Cover the bowl with a thin layer of plastic wrap. Put it in the freezer for around an hour to marinate.
- 6-Soaking bull and other red meats is completely voluntary. Then you can ignore the marinating stage and move immediately to preparing the goat meat.
- 7-Set aside the habanero (scotch bonnet) peppers after pounding or blitzing them.
- 8- 1 onion, cut into 4 large portions
How to Make a Super Delicious Asun Recipe: Peppered Goat Meat

1- Place the marinated goat meat in a pressure cooker after marinating it.
2-Pour half a cup of water over the goat meat, add the onion chunks, and begin cooking over medium heat.
3-When the goat flesh is cooked through, remove the large chunks of onion and season with salt to taste.
4- Increase the heat and continue to stir regularly until all of the leftover liquid in the saucepan has been absorbed. You don’t want to waste any flavor by discarding the goat meat stock.
5- Place the goat meat on a baking sheet that has been lined with parchment paper.
6- Grill /broil the meat in the oven at 180°C/350°F until it is golden all over. To keep them from drying out, turn them every now and then. This should take just over 15 minutes.
7- While the meat is grilling, wash, chop, and thread on toothpicks the green bell pepper, red bell pepper, and leftover onion.
8-When the meat has been well grilled, heat the vegetable oil in a clean, dry pot.
9-Added the grilled goat meat
10- stir fry constantly until the pepper is uniformly spread on the goat flesh. This is made possible by the vegetable oil, which also gives the asun recipe a lovely glow.
11-Serve the threaded vegetables alongside the small chops.
