Bring the chicken, water, and 1 tablespoon of salt to a boil in a large stockpot.. Remove the foam. Add the onions, celery, and garlic. Turn down the heat. Simmer, slightly covered, for 30 minutes.
Set aside the breasts. Add carrots. Simmer, slightly covered, for 40 minutes.
Remove the remaining chicken; discard the back and wings. Allow it to gently cool. Remove the flesh from the bones and cut it into bite-size pieces.
Save aside the remaining chicken for later use. Trim the fat. seasoning with salt.
