1 bone-in, skin-on turkey breast (5 pound)

1 sliced lemon

6 tbsp unsalted butter (at room temperature)

3 minced garlic cloves rosemary

2 tablespoons fresh thyme leaves, 

1 1/2 teaspoons fresh sage leaves 

1 1/2 tablespoons fresh 

2 tbsp. kosher salt

1 tsp black pepper, freshly ground


Roast Turkey Breast

Allow the turkey to come to room temperature for 30 minutes.

Preheat the oven to 325 degrees. Coat a 9 x 13 baking dish with nonstick spray or lightly oil it. Fill the baking dish halfway with lemon wedges.

Combine the butter, garlic, thyme, sage, and rosemary in a small bowl.

Using paper towels, thoroughly dry the turkey. Loosen the skin from the breast meat with your fingertips, then spread half of the butter mixture under the skin. Using wooden picks, secure the skin over the butter.

Place the turkey on top of the lemon slices, breast side up. Season the turkey with salt and pepper to taste with the remaining half of the butter mixture.

Place the turkey in the oven and bake for 1 hour 30 minutes, or until it reaches an internal temperature of 165 degrees F.

Allow to rest for 20 minutes before slicing; serve hot with gravy, if preferred.
